There's no replacement for homemade fresh pasta. This recipe only uses three ingredients and is very simple to make.
All you need is flour, eggs, and a little water. Using a pasta roller is the most convenient option, but you can totally roll the dough with a common dough roller and cut it with a knife.
WHAT YOU'LL NEED (scroll to full ingredient list)
Saucier or large pot
‘00 flour (or fine-ground / bread flour)
2 eggs
Water
DIRECTIONS
STEP 1: DOUGH
Add flour to a work surface and make a cavity in the center for the eggs.
Beat the eggs with a fork until well mixed, then slowly blend in the flour.
Once combined, knead the dough for about 5-10 minutes until the dough springs back when you press your finger into it.
STEP 2: REST
Wrap the dough ball with plastic wrap or a damp towel and let rest at room temperature for 30 minutes. While the dough rests, prepare your desired sauce and set aside.
STEP 3: CUT
Unwrap the dough ball and cut it into two equal pieces.
Dust each dough piece and roll it thin (about 1mm or 1/16th of an inch).
Dust the dough again and lay the flattened dough layers on top of each other.
Cut the dough layers into large rectangles.
Fold the dough from the ends to the center, about 4-5 times until both ends meet in the center.
Cut the folded dough into strips parallel to the direction it was folded.
STEP 4: BOIL
Bring a large pot of water to boil then generously salt it. Cook pasta for about 3-4 minutes until done.
STEP 5: DRAIN
Save about 1 cup of the pasta water. Then drain the rest of the water and immediately add the pasta to the sauce. Add the saved pasta water as needed to reach your desired sauce consistency.
