This Grilled Mango Habanero Chicken Sandwich is sweet, spicy, and smokey. The fresh Mango Habanero BBQ sauce elevates this sandwich to a whole other level.
Nothing says summer like a delicious grilled sandwich. The combination of crispy onion rings, sweet and spicy sauce, and grilled chicken with melted cheese will have your tastebuds singing.

Brioche Buns
Guacamole
Butter Lettuce
Mozzarella cheese
Crispy onion rings
Chicken thighs
Garlic powder
Salt
Black pepper
DIRECTIONS
STEP 1: CHICKEN
Season the chicken on all sides with garlic powder, salt, and pepper.
Grill over medium heat until an internal temperature of 170°F is reached.
Once done, top the chicken with sliced mozzarella and cook for another minute or two until it melts.
Remove from heat.
STEP 2: BUNS
Toast the buns on a griddle or skillet. To enhance the flavor, spread some butter or mayo on the buns before toasting.
STEP 3: ASSEMBLE
To the brioche bun, add the guacamole, lettuce, chicken, and top with Mango Habanero BBQ Sauce crispy onion rings.

4 Brioche Buns, toasted
1 C fresh guacamole
4 grilled chicken thighs (ingredients below)
5-6 leaves butter Lettuce
4-8 slices Mozzarella cheese
8-12 crispy onion rings
CHICKEN
1 lb chicken thighs
1 tsp garlic powder
Salt and black pepper to taste
