Crispy Cornflake Chicken

This Crispy Cornflake Chicken is covered in crunchy and simple cornflake coating and cooks in the air fryer for 15 minutes.

 


We love this recipe in crispy chicken sandwiches, chicken tenders with a side of sauce, or even just on its own. There's little prep and it's very fast and easy to make.




 


 

DIRECTIONS

STEP 1: PREP
  • In a food processor, blend the salt, brown sugar, chili powder, black pepper, garlic powder, onion powder, and cornflakes until a coarse consistency is reached.

    • A small amount of larger cornflake pieces is ok, but big pieces won't stick to the chicken well. You can also add the ingredients to a large Ziploc bag and crush the cornflakes by hand or with a rolling pin.

  • Add the mixture to a shallow dish.

  • In a medium bowl, whisk the eggs and set aside.

STEP 2: COAT
  • With one hand, dip the chicken in the beaten eggs to coat, then lay them flat in the cornflake mixture.

  • Fully cover the top of the chicken with the mixture.

  • With the other hand, firmly press down on the chicken to ensure the mixture adheres to the chicken.

STEP 3: AIR FRY
  • Preheat the air fryer to 400°F.

  • Add the coated chicken to a parchment paper lined tray and air fry for about 15 minutes with a flip halfway through.

    • The chicken is done when the internal temperature reaches 165°F.

STEP 4: COOL
  • Remove from air fryer and let slightly cool, uncovered, on a wire rack.

    • The wire rack allows air to circulate around the chicken so that steam doesn't reduce the crispiness.


 


 

INGREDIENTS

Makes 3-4 servings

  • 1 lb chicken thighs, boneless

  • 2 eggs

  • Cooking oil spray


DRY MIX

  • 1/2 TBSP kosher salt

  • 2 TBSP brown sugar

  • 1 TBSP chili powder

  • 1 tsp black pepper

  • 1 tsp garlic powder

  • 1/2 tsp onion powder

  • 3 cups cornflakes cereal (about 100g)
