Creamy Tomato Soup

This creamy tomato soup is easy, comforting, and guaranteed to warm you up on a cold day. This soup can be made in minutes with ingredients you may already have at home. Pair this with a Brown Ale and grilled cheese sandwich and you have yourself a delish meal that's ready in no time.

 

Creamy Tomato Soup

This soup is a perfect winter meal, especially for days when you don't want to spend much time in the kitchen. It's warm, creamy, and has a rich flavor that the whole family will love. The best part is that you probably already have many of the ingredients in your kitchen.


This recipe goes well with many different beer styles, but Brown Ales in particular are one of our favorites. View the Brown Ale recipe.




 

  • Yellow onion

  • Crushed red pepper flakes (optional)

  • Olive oil

  • Garlic

  • Chicken stock

  • Canned diced tomatoes

  • Tomato Paste

  • Heavy cream

  • Butter

  • Fresh basil

  • Parmesan cheese (optional)


 

DIRECTIONS


STEP 1: COOK ONION
  • In a deep pan, heat the olive oil over medium heat and cook the diced onion until translucent.

STEP 2: SAUTE GARLIC & PEPPER
  • Add the crushed red pepper and garlic and sauté until fragrant (15-20 seconds).

STEP 3: ADD LIQUIDS & TOMATO
  • Add the chicken stock, heavy cream, butter, diced tomatoes, and tomato paste, and bring to a simmer for 10-15 minutes.

STEP 4: ADD BASIL
  • Add lightly packed, chopped basil to pan.

STEP 5: BLEND
STEP 6: SERVE
  • Serve with a drizzle of olive oil, heavy cream, and fresh chopped basil.



 


 

INGREDIENTS

Makes 4-5 servings

  • 1/2 yellow onion, diced

  • 1/4 tsp crushed red pepper flakes (adds mild spiciness, omit if desired)

  • 1-2 TBSP olive oil

  • 2 cloves garlic, roughly chopped

  • 3/4 C chicken stock

  • 1 can (28 oz) diced tomatoes

  • 1 TBSP tomato paste

  • 1/4 C heavy cream

  • 2 TBSP unsalted butter

  • 1/3 C fresh basil, chopped

  • Fresh basil, chopped (optional topping)

  • Parmesan cheese (optional topping)
