This creamy tomato soup is easy, comforting, and guaranteed to warm you up on a cold day. This soup can be made in minutes with ingredients you may already have at home. Pair this with a Brown Ale and grilled cheese sandwich and you have yourself a delish meal that's ready in no time.

WHAT YOU'LL NEED (scroll to full ingredient list)
Yellow onion
Crushed red pepper flakes (optional)
Olive oil
Garlic
Chicken stock
Canned diced tomatoes
Tomato Paste
Heavy cream
Butter
Fresh basil
Parmesan cheese (optional)
DIRECTIONS
STEP 1: COOK ONION
In a deep pan, heat the olive oil over medium heat and cook the diced onion until translucent.
STEP 2: SAUTE GARLIC & PEPPER
Add the crushed red pepper and garlic and sauté until fragrant (15-20 seconds).
STEP 3: ADD LIQUIDS & TOMATO
Add the chicken stock, heavy cream, butter, diced tomatoes, and tomato paste, and bring to a simmer for 10-15 minutes.
STEP 4: ADD BASIL
Add lightly packed, chopped basil to pan.
STEP 5: BLEND
Transfer everything to a blender or use an immersion blender to blend the soup until smooth.
STEP 6: SERVE
Serve with a drizzle of olive oil, heavy cream, and fresh chopped basil.

Makes 4-5 servings
1/2 yellow onion, diced
1/4 tsp crushed red pepper flakes (adds mild spiciness, omit if desired)
1-2 TBSP olive oil
2 cloves garlic, roughly chopped
3/4 C chicken stock
1 can (28 oz) diced tomatoes
1 TBSP tomato paste
1/4 C heavy cream
2 TBSP unsalted butter
1/3 C fresh basil, chopped
Fresh basil, chopped (optional topping)
Parmesan cheese (optional topping)
