This Creamy Chicken Rigatoni is easy, deliciously satisfying, and a guaranteed crowd-pleaser. Prep this cozy dish ahead of time and bake when ready - we're all about convenience in our house.
Creamy rich pasta baked with savory juicy chicken, sun-dried tomatoes, garlic sautéed broccoli, and topped with cheesy mozzarella. This Creamy Chicken Rigatoni is the definition of a homecooked meal.

Deep pan or skillet
Chicken breast
Yellow onion
Garlic
Broccoli
Spinach
Fresh parsley
Rigatoni
Sun-dried tomatoes
Garlic powder
Smoked paprika
Dried oregano
Black pepper
Mozzarella
Avocado oil
Butter
Heavy cream
Whole milk
Sea salt
DIRECTIONS
STEP 1: CHICKEN
Season the chicken on all sides with garlic powder, smoked paprika, oregano, black pepper, and salt.
Add to a preheated deep pan or skillet with cooking oil.
Cook on medium heat for a few minutes on each side until the chicken gets a crispy crust and the internal temperature reaches 160°F (don't overcook, we're still going to bake this).
Remove cooked chicken from pan, tent with foil, and set aside for a 10-minute rest.
Slice chicken into small chunks.
STEP 2: PREHEAT
Preheat oven to 375°F.
STEP 3: CREAMY RIGATONI
Sautee the onions with butter in a large deep skillet over medium heat until translucent.
Add the garlic and broccoli and cook until slightly tender.
Add the spinach and cook for 1-2 minutes. Then mix in the sundried tomatoes, cream, milk, and salt.
Simmer for 10 minutes.
STEP 4: PASTA
Bring a large pot of salted water to boil.
Add dry pasta and cook until al dente. Drain and add to the pan with the rest of the ingredients.
STEP 5: BAKE
Add the mozzarella cheese and chopped chicken. Top with fresh parsley.
Bake in the oven at 375°F for 15 mins. Optional – broil for the last few minutes until the cheese begins to bubble and brown.

1-2 chicken breast, sliced into strips
1 TBSP avocado oil
1 tsp garlic powder
1/4 tsp smoked paprika
1/4 tsp dried oregano
1/4 tsp black pepper
1/4 tsp sea salt
PASTA
1 lb rigatoni
CREAMY RIGATONI BASE
2 TBSP butter, unsalted
1/2 yellow onion, diced
3 cloves garlic, minced
2 C broccoli, chopped
2 C spinach, raw
1/2 C sun-dried tomatoes
1/2 C heavy cream
1.5 C whole milk
2 C mozzarella, shredded
1 TBSP fresh parsley, chopped
Salt to taste (1/4-1/2 tsp)
