WHAT YOU'LL NEED (scroll to full ingredient list)
Chicken
Yellow onion
Unsalted butter
Dunkel
Worcestershire sauce
Tomato sauce
Butter
Brown sugar
Honey
Black pepper
Salt
Munich Dunkel or other dark malty lager beer.
DIRECTIONS
STEP 1: BBQ SAUCE
In a small saucepan, sautee the onions with butter until translucent.
Add a little beer to deglaze, then slowly add the remaining beer. Simmer until the volume decreases by half.
Add the remaining ingredients and return to a simmer for 10-15 minutes until thickened.
Using an immersion blender, blend the sauce until smooth.
STEP 2: CHICKEN
Once the BBQ sauce has completely cooled, add 1 cup to a gallon Ziploc bag.
Chop the chicken into large chunks, add to the Ziploc bag, and let it marinate for 2-4 hours, or at least 30 minutes.
Put the chicken on to the skewers and grill over medium heat until fully cooked. The chicken is done when the internal temperature reaches 170°F.
STEP 3: SERVE
Serve with BBQ'd veggies and a Munich Dunkel.
